Introduced as a new feature in iOS 11, 'Offload Unused Apps' will automatically delete apps that you haven't used in a while from your iPhone when you run out of storage. While the deleted apps' icons still exist (with a cloud next to their names), each app's data remains on your device, so if you ever need to redownload an app, you won't lose. You're starting up your Mac but don't have time for the computer's normal boot process. Instead of waiting for all those startup apps to load, you can temporarily stop them for just this one session.
Apple has been working with developers to transition their apps, and in 2018 Apple informed them that macOS Mojave would be the last version of macOS to run 32-bit apps. Starting with macOS Catalina, 32-bit apps are no longer compatible with macOS.

When installing macOS, you may see a list of recently used apps that are 32-bit. You can review this list before deciding to continue installation. You may also see a prohibitory symbol over the icon of each 32-bit app in the Finder, letting you know that the app will not open.
